1. Place the knife sharpener on a level flat surface, such as your worktop
2. When you first use our sharpener, you will need to shape the knife edge with the first sharpening. This could take longer than normal as we need to remove some steel from the edge of your blade.
Place the heel of the knife inside the slot marked 'COARSE' of the sharpener [some models may be marked with a number 1] and pull the the knife straight through keeping it at a 90 degree angle to the worktop.
Repeat this 10-20 times until you begin to feel an edge begin to form.
There is no need to use excessive force, let the sharpener do the work, just keep the knife straight and steady as you pull through.
3. When you have an edge form, then use the same procedure on the slot marked 'FINE'. [Some models may be marked '2'] This will finish and polish the edge. Pull the knife through this section until you are happy with the sharpness.
4. Serrated knives can be sharpened on the 'FINE' slot, just pull your knife through slowly and do not use a lot of downward force.
